DEEP DISH APPLE PIE
Pastry for 9 inch single crust pie
10 c. sliced apple
1 c. white sugar
1 tbsp. corn starch
1/2 tsp. cinnamon
1/2 tsp. nutmeg
Dash of salt
2 tbsp. fresh lemon juice
3 tbsp. butter

Place apple slices in a deep buttered baking dish at least 3 inches deep. Mix sugar, corn starch, cinnamon, nutmeg and salt in a dish and sprinkle over apples. Sprinkle with lemon juice and dot with butter.

Roll out dough to fit top of deep baking dish with a 1-inch overhang. Drape pastry over top of baking dish and fold dough under to make rim. Crimp edges - cut a vent in center of pastry.

Bake at 400 degrees for 45 to 60 minutes until apples are tender and juices are bubbling. Crust should be golden brown. Remove from oven and cool. Serve warm or at room temperature. Serves 8 to 10.
