CHEESY CATFISH, PLEASE 
2 lbs. skinless catfish
1/4 c. Parmesan cheese
1/4 c. flour
1/2 tsp. pepper
1 tsp. paprika
1/4 c. milk
2 tbsp. butter, melted
3 oz. shredded mixture of Mozzarella and Cheddar cheese

Combine the Parmesan, flour, pepper and paprika. Dip catfish in milk and beat with crust mixture. Place the fish in a baking pan. Pour the butter over the fish, bake at 400 degrees for 15-20 minutes or until golden and flaky. Sprinkle fish with shredded cheese and put under broiler until bubbly. Serves 8.
