PEACH TOPPING FOR NO - BAKE
CHOCOLATE CHEESECAKE
 
1 tsp. unflavored gelatin
1 tbsp. cold water
2 tbsp. boiling water
1 c. heavy or whipping cream
2 tbsp. sugar
1 tsp. vanilla
1/2 c. sweetened peaches, drained and diced

Sprinkle gelatin onto cold water in small glass dish; allow to stand a few minutes to soften. Add boiling water and stir until gelatin is dissolved. Whip cream and sugar until stiff; beat in gelatin mixture and vanilla. Fold in diced peaches.
