JIM EVAN'S LASAGNE 
2 lb. ricotta cheese
2 slightly beaten eggs
1/4 c. grated Parmesan cheese
1/2 c. chopped parsley or more
1 1/2 tsp. salt

SAUCE:

1 lg. jar Ragu sauce
1 lb. ground beef
Chopped green onions
Garlic & oregano to taste

Boil 1 pound lasagne noodles and have ready. Slice about 1 1/2 pounds mozzarella cheese thin. oil a large baking dish. Spread a layer of sauce on bottom. Arrange a layer of noodles overlapping each other. Spread with sauce; sprinkle with Parmesan cheese; cover with 1/2 the mozzarella and top with 1/2 the filling mixture. Repeat. Save some noodles for the top and cover with a cup or 2 of sauce.

Bake at 350 degrees for 1 hour if just made or 1 1/2 hours if refrigerated. Cover with foil for the last 10 minutes.
