BROCCOLI PUFFS 
2 (10 oz.) pkg. frozen chopped broccoli, thawed, drained
2 tbsp. minced onion
3/4 c. shredded Mozzarella cheese
3/4 c. grated Parmesan cheese
2 egg whites, beaten
1 tsp. garlic powder
1 tsp. thyme
1/2 c. melted butter
2 1/2 c. fresh bread crumbs
1/2 c. seasoned Italian bread crumbs

Preheat oven to 350 degrees.

Combine first 7 ingredients in bowl; mix well.

Add butter and 2 1/2 cups bread crumbs; mix well.

Mixture will be very moist.

Shape into 1 inch balls. Coat with 1/2 cup seasoned bread crumbs. Place 1 inch apart on baking sheet.

Bake for 25 minutes.

Yield: 72 appetizers.

Lighten up: Substitute butter for butter and use skim milk and light cheeses.
