1/2 lb. butter 1 lb. confectioners' sugar 1 lb. flaked coconut 1/2 can sweetened condensed milk or 1/2 c. 1 c. chopped nuts 1 tsp. vanilla In mixing bowl cream together butter and sugar. Add coconut, milk, nuts and vanilla. Stir until well blended. Chill until slightly firm, roll into walnut sized balls. Insert a toothpick in each ball. Place balls on cookie sheet and freeze. Over simmering water, melt 12 ounces chocolate chips, 4 ounces unsweetened chocolate and 2" piece paraffin wax. Using picks as handlers, dip frozen balls in chocolate mixture. Chill until firm. Makes 7 dozen cookies. |
