PECAN BALLS 
1 c. sifted all-purpose flour
1/2 c. butter, softened
1 c. finely chopped pecans or hazel nuts
2 tbsp. granulated sugar
1/8 tsp. salt
1 tsp. vanilla extract
Confectioners' sugar

1. In a large bowl, combine all ingredients except confectioners' sugar. With hands, mix until thoroughly blended. Refrigerate 30 minutes.

2. Meanwhile, preheat oven to 375 degrees using hands, roll dough into balls 1 1/4 inches in diameter. Place 1 inch apart on ungreased cookie sheets.

3. Bake 15-20 minutes or until cookie is set not brown. Remove to wire rack, cool slightly and roll in confectioners' sugar while warm. Before serving roll again in sugar.
