COMPANY MEAT ROLL 
2 eggs, beaten
3/4 c. bread crumbs
1/2 c. tomato juice
1 1/2 tbsp. parsley flakes
1/4 tsp. oregano
1/4 tsp. salt
1/4 tsp. pepper
1 sm. clove garlic, minced
2 lbs. lean ground beef
8 slices ham, sliced thin
6 oz. Mozzarella cheese, shredded
3 slices Mozzarella cheese

Combine eggs, crumbs, tomato juice, parsley flakes, oregano, salt, pepper, and garlic. Add ground beef, mix well. Pat out on foil to form a 10 x 12 inch rectangle. Arrange ham on top. Sprinkle with shredded cheese. Starting from short end, roll up and seal edge and ends by squeezing together. Place seam side down in 9 x 13 inch baking dish. Bake 1 1/4 hours at 325 degrees. Before serving arrange slices of cheese on top of loaf and return to oven for 5 minutes or until cheese starts to melt.
