SPANISH RICE 
1 lb. ground beef
1 qt. tomatoes
1 c. onions, chopped
1 green pepper, chopped
1 c. celery, chopped
2 tbsp. fat
1 c. rice

Cook onion, pepper, and celery in fat until tender. Add ground meat and continue cooking until crumbly and the red color disappears. Add tomatoes and rice. Bring to boil and cook 15 minutes. Turn off the heat and leave covered 20-25 minutes to steam and finish cooking.
