HEALTHY CARROT CAKE 
1 1/2 c. whole wheat flour
1 1/2 c. unbleached flour
1/2 c. brown sugar
2 1/2 tsp. baking soda
1 tbsp. cinnamon
2 c. shredded carrots
1 c. crushed pineapple, undrained (juice)
1 c. honey
1/2 c. safflower or veg. oil
4 egg white
1 tbsp. vanilla
1/3 c. walnuts, optional

Mix all ingredients. Beat 2 minutes on high. Pour into 9 x 13 inch pan coated with spray. Bake in a preheated 350°F oven for 40-50 minutes. Done when pick comes out clean. Cool 30 minutes.

I made this for a surprise birthday party, and it was a big hit! I bought fresh pineapple and crushed it, and I made sure I put the very best ingredients I could find, like raw organic honey, organic vanilla, and organic carrots. Some guests said it was the best carrot cake they had ever eaten! Wow! My husband who wasn't crazy about carrot cake, now wants me to make it for him for this weeks snack cake for work...good bye honey buns! :)
