VEGETABLE RING 
1/4 c. melted butter
1 c. milk
3 eggs well beaten
1 tbsp. grated onion
1/2 tsp. Italian seasoning
1/2 tsp. salt
1/4 tsp. pepper
3/4 c. crushed Ritz crackers
1 to 1 1/2 c. raw or cooked vegetables (grated or mashed)

In a mixing bowl combine butter, milk, eggs, onion, salt, pepper, Italian seasoning. Beat well with a fork. Stir in cracker crumbs and cut up your vegetables pretty fine (suggestion - carrots, zucchini, celery, string beans, peas - any three together are fine).

Pour into a well greased 5 cup glass or microwave-safe plastic ring mold. Insert a paper cup into a round dish if necessary to make a ring mold. Grease the cup and place in the center upside down.

Cook medium-high (7) for 10 to 12 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
