COUNTRY STYLE STEAK 
1 1/2 lbs. cubed steak (prefer sirloin)
1/2 c. flour
1/2 tsp. salt
1/2 tsp. pepper
1/2 c. shortening

Mix flour, salt and pepper. Flour meat, melt shortening in skillet until hot, then add floured meat. Brown on each side 5-8 minutes. Remove meat and put in baking dish. Pour gravy over meat and bake uncovered in preheated oven at 325 degrees for 45 minutes.

GRAVY:

4 tbsp. drippings
1/2 c. flour
1 tsp. salt or to taste
3 c. half milk and water

Pour drippings from skillet. Return 4 tablespoons of drippings to skillet and add 1/2 cup flour and 1 teaspoon salt (left from coating steak plus additional if needed). Brown over medium heat, loosening brown crusty bits from skillet. Stir until smooth. After browning, remove from heat and stir in half and half mixture. Return to heat. Stir and simmer until well mixed but thin. Will thicken as it bakes in the oven.
