LAOTIAN FRIED RICE 
1 lb. chicken or 12 oz. shrimp
vegetables, sliced - whatever you like
1 tsp. garlic
oil
3-4 eggs
3 tbsp. soy sauce
3 tbsp. oyster sauce
1/4 c. sugar
pinch black pepper
crushed dried red chili peppers (optional)
4-5 c. white rice

Cook 4-5 c rice. Slice thawed chicken into edible pieces or thaw and peel shrimp. Cook meat in oiled wok or other pan thoroughly; set aside. Beat eggs, cook with oil in scrambled fashion; set aside. Fry vegetables in oil until desired tenderness; set aside.

In clean wok/pan, add oil evenly to entire pan, add garlic and cook until brown on medium heat (be careful not to burn it). Add meat/veggies. Add cooked rice and keep turning rice, meat, and veggies over for about 7-9 minutes Add sugar, soy sauce and oyster sauce and peppers (play with these ingredients until you get your desired flavor). Stir in eggs and Serve.

Serves 4-5.
