3 eggs, well beaten 1 c. shortening 2 c. light brown sugar 1/2 tsp. salt 4 c. flour (I use 3 1/2 cups) Cream shortening, add brown sugar gradually while creaming. Add well beaten eggs, flour and salt. Mix well. Chill dough thoroughly. FILLING: 2 c. dates, chopped 1 c. water 1 c. granulated sugar 1 c. nuts, chopped (pecans are best) Mix dates, granulated sugar and water in saucepan. Cook over heat until thick. Add nuts. Cool. When dough is chilled divide into 3 or 4 parts. Roll each in a rectangle, spread date filling and roll up as for jelly rolls. Chill overnight. Cut in slices. Bake at 400 degrees. |
