SWISS POTATO SOUP 
2 tbsp. butter
1/2 c. chopped onion
1/2 c. shredded carrot
1/2 c. chopped mushroom
1 can chicken broth
3 c. milk
Salt and pepper
1 c. instant potato flakes
1/2 c. shredded Swiss cheese

Melt butter. Add onion, carrot and mushrooms. Cook until tender. Add chicken broth, milk, salt and pepper. Bring to boil.

Add instant potato and cook until thickened slightly. Add Swiss cheese. Stir until cheese is melted. 4 servings.
