KATHERINE'S GAZPACHO | |
4 ripe tomatoes, seeded and chopped 2 cucumbers, peeled, seeded, and chopped 2 red peppers, seeded and chopped 1 red onion, peeled and chopped 1-2 jalapeños, seeded and chopped 2 cloves garlic, minced 1/2 cup olive oil 1/4 cup white wine vinegar 3 day old slices white bread 1 1/2 to 2 cups V8 juice 1 to 2 tbsp. Worcestershire juice of one lime salt and pepper, to taste cilantro (optional) oregano (optional) While you chop the veggies, soak the bread in the V8. Chop the veggies and place all of the ingredients, including the bread and V8, in a food processor or blender and purée to the desired consistency. I like mine creamy, but others like it chunky. Place in a pitcher and let the flavors marry in the refrigerator overnight. I drink mine from a glass like they do in Spain. Garnish with shrimp and avocado. This is very refreshing on a hot day.
