GRANDMOTHER SEARL'S STUFFED
TOMATOES
 
6 med. tomatoes
Salt

Wipe, and remove thin slices from stem end of tomatoes. Take out seeds and part of pulp. Reserve pulp. Sprinkle inside of tomatoes with salt; invert and allow to stand 1 hour.

FILLING:

1/2 tbsp. finely chopped onion
2 tbsp. butter
1/2 c. soft stale bread crumbs
1/2 c. cold cooked chicken
Reserved tomato pulp
Pinch of sugar
Salt and pepper to taste
1 egg, slightly beaten
Buttered cracker crumbs

Cook onion in butter for 5 minutes, stirring constantly. Add bread crumbs, chicken, tomato pulp, sugar, salt and pepper. Cook 5 minutes and add egg and cook 1 minute longer. Refill tomatoes with mixture. Sprinkle with buttered cracker crumbs. Bake about 15 minutes in a moderate oven.
