APPLE OVEN PANCAKE 
3/4 c. flour
1 tbsp. sugar, mixed with pinch of cinnamon
1/2 tsp. salt
3 eggs
3/4 c. milk
1 1/2 c. chopped apples
3 tbsp. butter

Peel and chop apples. Sprinkle with sugar. Stir together flour, sugar, and salt. Beat eggs until thick, then stir in flour mixture and beat until smooth. Add milk and beat well. Heat oven to 400 degrees. Heat 10 inch iron skillet. Melt butter in pan and pour in batter. Sprinkle apples on top. Bake about 15 minutes. Pancake will climb up sides of pan and brown. Remove from oven and sprinkle with confectioners' sugar. (Squirt lemon juice on top, if desired.) Serves 4 or 5. Double recipe, bakes well in a broiler pan.
