ZUCCHINI PARMIGIANA 
2 med. zucchini
1 sm. onion, chopped
1/2 dozen hard boiled eggs, chopped
1 lb. ground beef
1 lb. Parmesan cheese, grated
1/2 tsp. parsley
1 lb. Mozzarella cheese, grated
1 sm. can peeled tomatoes
1 tbsp. olive oil
Salt and pepper to taste
Pinch of oregano

Gently wash zucchini to remove sand and cut into 1/4 inch slices. Add salt and pepper to taste. Cook beef with minced onion, add tomato, oregano, and parsley. Add one can of water to mixture. Bring to a boil and let simmer for about 1 1/2 hours.

Arrange slices of zucchini in a 9 inch casserole into which a ladle of tomato sauce has been added. Sprinkle chopped egg, Mozzarella cheese and Parmesan cheese on the zucchini. Top with ladle of tomato sauce and ground beef. Repeat process until casserole is filled and cover ingredients with remainder of tomato sauce and cheeses.

Bake at 350 degrees for 1 1/2 hours or until the zucchini is tender. Remove from oven and serve hot. Serves 4-6.
