OKRA OMELET 
2 c. okra, cut crosswise 1/4 inch
1 egg
1/4 tsp. black pepper
1/2 c. hash puppy mix
1 tsp. dried onion flakes
4 tbsp. bacon drippings
1/2 c. milk

Mix all ingredients except bacon drippings. Grease a medium size baking dish with bacon drippings. Pour mixture into pan and pat down flat. Bake in a 350 degree oven 30 minutes. Turn omelet over and bake 5 to 10 minutes longer. Remove from oven and insert on serving dish. Cut to serving size. Serve warm. Yield: 4 to 6 servings.
