1 to 1 1/2 lbs. cubed round steak or minute steaks
1 can stewed tomatoes
1 1/2 c. Minute rice
Season steak with salt and pepper to taste; roll in flour. In large skillet, brown meat in small amount of cooking oil. Add 1 can stewed tomatoes, bring to boiling, cover and simmer 1/2 hour or until meat is tender. Add rice - 1 cup for 4 servings; 1 1/2 cups for 6 servings (add additional water if necessary to cook rice). Cook 1 or 2 minutes, covered, turn off heat and let stand until juice is absorbed by rice. For added flavor add chopped onion and green peppers and brown along with meat.
