CARROT - ONION STIR FRY 
6 tbsp. (3/4 stick) butter
1 med. onion, sliced thin
6 med. carrots, peeled & cut julienne (or chopped in food processor)
1 tbsp. sugar
1 1/2 tbsp. dried tarragon, crumbled
Salt & pepper

Melt butter in skillet (medium heat). Add onions and stir until soft (3 minutes). Increase heat to medium-high. Add carrots and stir until just crisp tender (5 minutes). Add sugar and tarragon and cook a few more minutes.
