PUMPKIN MUFFINS 
2 lg. eggs
1 c. canned plain pumpkin
1/2 c. raisins
1/2 c. brown sugar, firmly packed
1 tsp. pumpkin pie spice
1/2 c. chopped walnuts
1/2 c. milk
1/3 c. butter, melted
1 1/2 c. flour
2 tsp. baking powder
1/2 tsp. salt

1. Heat oven to 400 degrees. Place paper liners into 12 cup muffin pan.

2. In small bowl, beat together eggs, pumpkin, milk, melted butter and raisins until well blended.

3. In large bowl thoroughly combine flour, brown sugar, baking powder, spice and salt.

4. Add liquid ingredients all at once to dry ingredients; stir just until combined. Stir in walnuts.

5. Fill each lined muffin cup 2/3 full.

6. Bake for 25 minutes, or until wooden pick comes out clean.
