RECIPE COLLECTION
“HUMMUS” IS IN:

HUMMUS 
1 (12 oz.) can garbanzo beans
1 clove garlic
2 tbsp. extra virgin olive oil
2 to 3 tbsp. tahini sauce (sesame paste)
juice of 1 small lemon
1/2 tsp. salt

Drain 1/3 of the water from the can of garbanzo beans into a small bowl. Set aside for later use.

In a blender, mix together the garbanzo beans with the remaining can water and the rest of the ingredients.

Blend for 1-2 minutes until a smooth, slightly fluid paste is formed.

If desired, add small amount of the saved can water and blend to create a more fluid consistency.

I used 2 cups of garbanzo beans, 2 large cloves of roasted garlic, 2 tbsp. of lemon juice and olive oil, 1 tbsp. toasted sesame seeds, salt and pepper to taste and 1/4 tsp. cumin. I did not follow the recipe because I was missing ingredients. It turned out very tasty and very filling!

To the mix I have added 1/4 tsp. curry powder and 1/4 tsp. cumin and a tbsp. parsley flakes. If you do not have the sesame seeds or the tahini paste I have found that regular peanut butter (I prefer creamy) is a good substitute. As a filling for a Pita Sandwich I try not to blend the mixture to too thin a texture.

Take it to the next level and cook your own garbanzo beans. They just have to soak in water, then simmer on stove for a couple of hours. This makes this recipe more organic. I just clean or do something while it cooks!

Try my friend's suggestion: buy dried chick peas, then sprout a cup or less. This assures more vitimans, less canned additives! I also grind sesamy seeds to replace tahini sauce. Add a little (anti-oxident) water to bring to the right consistance. Yes, to the cumin.
