CARROT RING 
2 c. grated raw carrots, firmly packed
2 c. fine bread crumbs
1/2 c. chopped pecans
3 eggs, slightly beaten
1 c. milk
1/4 tsp. salt
White pepper to taste
2 tbsp. minced onion
2 tbsp. salad oil
1 (10 oz.) pkg. frozen peas, cooked

Grease 6 cup ring mold. Preheat oven to 350 degrees. Mix all ingredients except peas and pour into ring mold. Set in pan of hot water and bake 40 minutes or until firm - unmold onto serving platter and fill center with hot green peas. Makes 6 servings, about 265 calories each.
