PINEAPPLE UPSIDE DOWN CAKE 
1/2 stick butter
4 or 5 slices pineapple
1 c. self-rising flour
5 tbsp. pineapple juiced
1/2 c. brown sugar
1 c. sugar
3 eggs

Heat oven to 350 degrees. Melt the butter and brown sugar slowly in a 9x9x2 inch square pan or skillet. Beat the sugar and egg yolks until light. Blend alternately the juice and flour with the beaten yolks and sugar. Beat the egg whites and fold in. Place pineapple slices in melted sugar and butter. Pour batter over this mixture and bake 30 to 40 minutes.
