PINEAPPLE UPSIDE DOWN CAKE | |
1 tbsp. butter 1/4 c. brown sugar, firmly packed 6 canned pineapple slices 6 drained cherries 1 1/4 c. flour 1 1/2 tsp. baking powder 1/4 tsp. salt 1/4 c. shortening 3/4 c. sugar 1 egg, beaten 1/2 c. milk 1 tsp. vanilla Heat oven to 350 degrees. Melt butter in 8 x 8 x 2 pan. Sprinkle with brown sugar. Arrange pineapple slices on brown sugar, put cherries in center of pineapple slices. Sift together next 3 ingredients, work in shortening with spoon until creamy. Slowly add sugar, egg and beat well. Add flour, milk and vanilla. Spread on fruit. Bake 40 minutes. |
