CHILI CONQUESO 
1/2 lb. bacon
2 green peppers
4 onions
2 cloves garlic
2 lbs. cheese - sharp and Monterey Jack are good
1 can green chilies (leave the seeds in the chilies if you want it hot)
1 (No. 2) can drained tomatoes

Fry bacon and drain some fat from pan. Saute chopped peppers and onions and minced garlic until soft. Add chopped chilies, tomatoes and cheese. When cheese melts, add crumbled bacon. Serve with fried tortillas, Doritos, etc.
