CHILI PORK TOFU 
3 tbsp. vegetable oil
2 tsp. salt
3/4 lb. ground pork
1/2 round onion, minced
2 lg. cloves garlic, minced
1 tbsp. hot chili paste or hot chili pepper, minced
1/2 tbsp. sesame oil
2 tbsp. brown bean paste
1 tbsp oyster sauce
1 c. chicken broth
2 blocks tofu, cut into 1/2 inch cubes
4 tbsp. chives or green onions, minced
Chinese parsley or green onions for garnishing

Heat wok, add 1 tablespoon vegetable oil and salt. Stir-fry ground pork on medium heat for five minutes or until slightly brown. Set aside. Add 2 tablespoons of vegetable oil to wok. Add onion, garlic, chili and sesame oil. Stir-fry until onions become clear and tender. Put cooked pork, bean paste and oyster sauce in wok, stir-fry on medium heat for about 1 minute. Add chicken broth, diced tofu and chives or green onions. Mix carefully, cover and cook 3 more minutes. Serve on heated platter. Garnish with greens.
