CARROT - ORANGE COOKIES 
Bake at 400 degrees for 12 minutes.

Makes 3 dozen.

2 c. sifted all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
1 c. vegetable shortening
3/4 c. sugar
2 eggs
2 tsp. grated orange rind
1 c. mashed cooked carrots
1 c. golden raisins
1 c. 10X (confectioner's) sugar
2 tbsp. orange juice

Sift flour, baking powder and salt onto sheet of wax paper.

Beat shortening, sugar and eggs with electric mixer until fluffy. Beat in orange rind and carrots. Stir in dry ingredients and beat until smooth; stir in raisins.

Drop dough by spoonfuls about 2 inches apart onto greased cookie sheets.

Bake for 12 minutes or until no imprint remains when touched lightly with fingertip. Remove to wire racks and cool completely. Combine 10X sugar with orange juice to make a glaze, drizzle over cookies.
