NEW MEXICAN SOPAPILLAS 
4 c. flour
1 tsp. salt
4 tsp. baking powder
2 tbsp. shortening
1 1/2 c. water
Shortening for frying

Mix flour, salt and baking powder. Work shortening into flour until well blended and use hands. Add enough water to make a soft dough, but not sticky. Knead well. Let stand 1/2 hour, covered, at room temperature.

Form dough into round flat circles with hands. Roll 1/8 inch thick. Cut into 3 inch squares. Fry in deep hot shortening at 450 degrees until brown. Drop each square into hottest part of shortening and flip hot grease on top to bubble up, then turn. Enjoy with honey or powdered sugar.
