BROCCOLI-RICE CASSEROLE | |
1 pkg. chopped broccoli (about 20 oz.) 2 c. cooked rice 1/2 c. diced onions 1/2 c. water 3/4 c. grated cheese 1 can cream of chicken soup 1 3/4 sticks butter 8 oz. Velveeta cheese 1 1/2 - 2 c. Ritz crackers Melt butter and Velveeta cheese with chicken soup and 1/2 cup water. Add onion, broccoli and rice. Mix all together and pour into a covered greased dish. Crush Ritz crackers and add enough butter to moisten Ritz crackers and sprinkle over casserole. Bake at 325 degrees for 1 hour. Sprinkle the grated cheese on top of casserole the last 10 or 15 minutes. |
