SWEET AND SOUR SHRIMP 
2 (10 oz.) pkgs. round breaded shrimp
1/2 tsp. salt
1/4 c. vinegar
2 tbsp. cornstarch
1/4 c. brown sugar, packed
1 tbsp. soy sauce
1 c. pineapple juice
1 (#2) can chunk pineapple
3/4 c. sliced green pepper
1/4 c. thin sliced onion

Cut tails off shrimp. Fry in 1/2-inch hot oil for 4-5 minutes. Set aside.

Combine cornstarch, salt, and brown sugar. Add vinegar, pineapple juice, and soy sauce; mix well. Cook in large frying pan until the sauce is clear and slightly thick; stir constantly.

Simmer 10 minutes. Just before serving, add shrimp, pineapple, green peppers, and onions. Cook 2-3 minutes. Stir well and serve over prepared rice.
