SMOKED PORK AND KRAUT | |
1 tbsp. flour 2 (3 lbs.) smoked pork shoulder butt (boneless) 1 (27 oz.) can Libby's sauerkraut, drained 1/4 c. brown sugar, firmly packed 1 med. apple, pared & diced 1/2 to 3/4 tsp. caraway seed 1/4 tsp. pepper Place flour in 14 x 20 inch cooking bag. Shake to coat inside. Place pork in bag, close with twist tie and place bag in 9 x 13 x 2 inch baking pan. Puncture 6 small slits in top of bag. Bake at 350 degrees for 2 hours. Remove from oven and open bag. Combine remaining ingredients. Mix well. Spoon over and around pork. Retie bag and bake for 40 minutes longer. |
