CHICKEN FRIED STEAK | |
1/3 c. all-purpose flour 1/2 tsp. salt 1/4 tsp. pepper 2 large eggs, beaten 1 tbsp. water 4 to 5 (4 oz.) cube steaks 1 1/2 c. fine dry bread crumbs 1/4 c. butter White Sauce Gravy: 1 tbsp. butter 1 tbsp. all-purpose flour 1 c. milk 1/4 tsp. salt 1/4 tsp. pepper Combine flour, salt and pepper. Set aside. Combine eggs and water. Set aside. Dredge steaks in flour mixture. Dip in egg mixture and dredge in bread crumbs. Melt butter in a large nonstick skillet over medium heat. Add cube steaks and fry 10 minutes, turning once. Top with White Sauce. Melt butter in a heavy saucepan over low heat. Add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk. Cook over medium heat, stirring constantly, until thickened and bubbly. Stir in salt and pepper. Yield: 1 cup. Makes 4 servings. |
