HAM STEAK WITH RED EYE GRAVY 
1 (1 lb.) ham steak, 1" thick
2 tbsp. light brown sugar
1/4 tsp. cinnamon
1/8 tsp. cloves
2 tsp. instant coffee
1 c. boiling water

Trim off fat from ham and dice (use butter if there is no fat). Cook fat until you get 2 tablespoons drippings, discard solids.

In small bowl combine sugar and cloves, rub into both sides of ham. Add to skillet and cook until brown (approximately 2 minutes). Keep warm.

In measuring cup, dissolve coffee in boiling water, add to skillet and cook about 10 minutes. (Must be syrupy.)
