VICTOR PETER'S SALMON CASSEROLE 
1 salmon head (or use 1 can red salmon)
1 lg. onion, sliced
4-6 med. potatoes, peeled & sliced

Cook salmon head in enough water to make approximately 1 1/2 cups broth and cook until flaky. Pick good salmon off the bones. Arrange salmon, onion slices and potato slices in casserole, salt and pepper to taste. Add broth until it barely covers layers and bake at 375 degrees until potatoes are tender.
