PETER'S PUMPKIN DELIGHT 
1 lg. can (3 c.) pumpkin
3 eggs, beaten
1 (13 oz.) can evaporated milk
1 c. white sugar
1 c. brown sugar
3/4 tsp. salt
1 1/2 tsp. cinnamon
3/4 tsp. ginger
3/4 tsp. nutmeg
White cake mix
1/2 c. melted butter
1/3 c. nuts (optional)

Mix first 9 ingredients in large bowl. Beat well. Pour into a large buttered pan (8 x 12).

Sprinkle white cake mix over top; press into mixture. Drizzle melted butter over top. Then sprinkle 1/3 cup nuts (optional).

Bake for 45-60 minutes at 350 degrees. Serve warm with ice cream or whipped cream. Serves 10-12.

My husband's Grandmother made this for us once, I got a picture of the recipe, the exact one here. It was so awesome! We loved it. Sadly she has passed but I cherish the memory of her making this delicious dessert for us while she was in her 90s and still cooking in her own kitchen with loved ones around.
