NIGHT BEFORE MASHED POTATOES 
12 med. potatoes (peeled, cooked and hot mashed)
1 (8 oz.) pkg. cream cheese, room temperature
1/4 c. butter
1/2 c. sour cream
1/2 c. milk
2 eggs lightly beaten
1/4 c. onion, finely chopped
1 tsp. salt and pepper

Mash potatoes, add cream cheese in small pieces, then butter. Beat well, mix in sour cream. Add eggs and onion to milk then to potato mixture. Add salt and pepper, beat. Place in greased casserole and refrigerate overnight. Bake at 350 degrees for 45 minutes. Serves 10.
