HIGH PROTEIN MUFFINS | |
2 c. soy flour 1 c. dry powdered milk 1 tsp. salt 1 tsp. baking powder 1 c. chopped dates or raisins 1 c. chopped nuts 3 slightly beaten eggs 3 tbsp. melted butter Grated rind of 1 orange 1/4 tsp. grated lemon rind 3/4 c. orange juice 3 tbsp. honey 1. Combine dry ingredients. 2. Add dates or raisins and nuts. 3. Combine remaining ingredients and stir into dry ingredients just until moistened. 4. Fill muffin tins 2/3 full. 5. Bake at 350 degrees for 20-25 minutes. |
