EASY OATMEAL COOKIES 
1 c. sugar
1 c. butter
1 c. flour
2 c. Quick Oats
1 tsp. baking soda (sifted with flour)

Preheat oven to 350°F.

Mix with hands -- form small balls and flatten on ungreased pan.

Bake for 8-12 minutes (depends on size of cookies made).

Variations: add 1 tsp. vanilla, applesauce, mashed bananas, cinnamon, raisins, cranberries, chopped nuts, etc. Agave syrup or honey can be substituted for sugar, if desired.

I used this recipe...didn't use the baking soda and had absolutely NO problem with it. although it didn't "puff" like a snickerdoodle, which our family doesn't like; it didn't fall apart and was delicious and easy. I love that my kids can use this and make a really fast snack that they enjoy.

I agree with adding 2 eggs and a little cinnamon! But I added 1/2 cup more of flour and 1/2 teaspoon of vanilla! It tasted amazing, add vanilla extract for sure!

It's good not to sweet. I added one cup of peanut butter, an extra cup of flour, one ripe banana, two eggs, one cup of raisins, and used chocolate chip oatmeal packets. Thought that would be to much but it works well together.... Lol Reminds me of banana nut muffins.

I gave this four stars because I also added an egg to the recipe. This is a vegan recipe, which is great but I think you should include the banana or applesauce as an egg replacement. Should be included in primary ingredients, not optional. I cut the recipe in half cuz I only had one egg. This was simple and absolutely amazing! I also added cinnamon, vanilla, and walnuts. Fun time with my 4 year old daughter! Thank you!!! Made perfect cookies! I usually mess up. I'll try the vegan version next time with bananas. Again, thanks for sharing!

My daughter and i made it and it was good but a little dry. the next time i doubled the recipe added vanilla and 4 eggs. i also didn't have enough sugar so i did half suger and other half brown sugar. it came out great.... very happy, easy and kid approved.

I like them, but it turned out more the consistency of a scone than a cookie. I did alter the recipe by using about a 1/2 cup more flour (as others had recommended) and used two eggs (also as others recommended). I used some cinnamon... didn't measure it out, just eyeballed it. I also used some vanilla, again just eyeballing it. They definitely need something extra to give it that little extra oomph, like some chocolate chips or something. In all honesty, after preparing them, even with using 2 cups of oats, I could not taste the oatmeal.
