STEAK AU POIVRE 
3 lb. boneless sirloin
2 tbsp. fresh ground black pepper
2 tbsp. butter
1 tbsp. salad oil
1/2 c. dry white or red wine
2 tbsp. brandy
1 tsp. salt

Wipe steak with damp paper towels. Rub 1 tablespoon pepper on each side. Slowly heat large skillet until very hot. Add 1 tablespoon butter and oil, stirring until butter is melted. Add steak. Over high heat, brown well on each side, 2 minutes per side. Reduce heat to medium and cook 8-15 minutes per side. Remove steak to heated serving platter and keep warm. Add remaining butter, wine, brandy and salt to skillet. Simmer, stirring 3 minutes. Pour over wine. Makes 6 servings.
