HUNGARIAN HOT CARROTS (MAGYAR
SAIGAREPA FOZELEK)
 
4 c. carrots, chopped
1/2 tsp. salt
Salted water, about 1 qt.
1 med. onion
1 tbsp. sugar
1 tbsp. vinegar

Cook carrots in boiling, salted water until tender. Drain and set aside. Brown bacon in skillet. Drain and set the bacon aside with the carrots. In the skillet with the bacon greased, saute the onion and then add the sugar and vinegar and cook for a few minutes. Mash carrots with potato masher; stir in bacon, onions, drippings and seasonings.
