CHICKEN ITALIAN 
2 whole chicken breasts (broiler-fryer) skinned, boned, cut into 1/2 inch strips
1/4 c. oil
1 med. onion, chopped
2 cloves garlic, minced
1 tsp. salt
1 tsp. Italian seasoning
1 c. pitted black olives
1 can (6 oz.) tomato paste
1 can (15 oz.) tomato sauce
8 oz. thin spaghetti
1 c. grated sharp Cheddar cheese

Heat oil in fry pan over medium heat. Saute chicken strips, onion and garlic about 6 minutes. Add salt and Italian seasoning, olives, tomato paste and tomato sauce. Mix well. Simmer 10 minutes.

Meanwhile, prepare spaghetti according to package directions. Place drained spaghetti in greased flat baking dish. Add chicken mixture; sprinkle grated cheese. Bake 350 degrees 15 minutes or until chicken is done and cheese bubbly. Makes 6 servings.
