CHOCOLATE MACAROONS | |
1/2 c. shortening 4 sqs. baking chocolate 2 c. flour 2 tsp. baking powder 1/2 tsp. salt 2 c. sugar 4 eggs, beaten 2 tsp. vanilla Powdered sugar Melt together shortening and chocolate. Sift flour with powder and salt; set aside. Add sugar to chocolate mixture, stirring over low heat 5 to 7 minutes (do not allow mixture to harden). Take off heat and add eggs a little at a time. Mix rapidly before they have a chance to cook in the hot mixture, creating lumps. Add vanilla. Add flour mixture, blending thoroughly. Chill dough 2 to 3 hour. Roll into balls the size of small walnuts. Roll balls in confectioners sugar. Bake on greased pan at 350 degrees for 8 to 9 minutes. Makes 5 to 6 dozen. (For best results, cookies should be soft when taken from oven.) |
