2 1/2 lb. chicken

Grease chicken with either butter and shortening and season well. Place chicken in shallow pan about 1 1/2 inches, then place pan in ordinary brown paper bag and close air-tight, either with staple or paper clips. Place in preheated oven at 350 degrees for 2 hours. Coat with barbecue sauce if desired.
