SPINACH CASSEROLE 
1 lg. container lg. curd cottage cheese
1/2 c. chopped onion
1/2 stick butter
3 eggs, unbeaten
1 pkg. spinach, chopped, cooked and drained
1/4 lb. Velveeta
3 tbsp. flour
3 tbsp. parsley
Salt and pepper to taste

Cut up butter and Velveeta into small cubes and mix with cottage cheese, flour, unbeaten eggs and cooked spinach. Stir well. Add onions, parsley, salt and pepper to taste. Put in greased casserole. Bake 1 hour at 350 degrees.
