SPLIT-PEA AND BARLEY SOUP | |
5 c. chicken broth 3 1/2 c. water 1 1/2 c. dried split peas, rinsed and drained 1/2 c. barley 1 lg. carrot, diced (3/4 c.) 1/2 c. chopped onion 1 lg. stalk celery, diced (1/2 c.) 1 tsp. minced garlic 1/4 tsp. dried thyme 1/4 tsp. white pepper 1. Put all ingredients in 3-4 quart pot. 2. Bring to boil, reduce heat and simmer 1 hour. Makes 7 1/2 cups, 4 main dish servings. Per serving: 385 calories, 25 grams protein, 67 grams carbohydrate, 3 grams fat. |
