LEMON ICE DESSERT | |
3 tbsp. butter, melted 1/8 tsp. low sodium salt 1/4 c. sugar substitute 2 tsp. grated lemon rind 1 tbsp. flour 3 1/2 c. skim milk 1/2 c. lemon juice Melt butter in pan. Blend in flour and salt. Add half the skim milk, stirring steadily to the boiling point. Mix in sugar, then cook on low heat 5-10 minutes. Remove from heat and stir in remaining milk. Turn into a glass oblong dish and freeze until sides set. Turn into a bowl; add the lemon juice and rind. Beat until frothy. Return to dish and freeze until set. Only 120 calories per serving. NOTE: When enjoying this, think you are eating your favorite ice cream without all of that fat! |
