PAN SAUSAGE 
2 tbsp. brown sugar
4 tsp. salt
1 tbsp. dried sage
2 tsp. ground savory (thyme)
1 tsp. pepper (black)
1 tsp. crushed dried red pepper
1/2 tsp. ground nutmeg
2 1/2 lb. fresh ground pork

In a large bowl, combine first 7 ingredients. Mix thoroughly. Add pork, mixing with hands until well blended. Cover and chill 6 hours or overnight. Shape into patties and fry.
